Astraea Morford is the head cheesemaker and a 2005 graduate of Oregon State’s Department of Horticulture. Owner Pat Morford — Astraes’ mother — has been a guest speaker in Oregon State food science professor Lisbeth Goddik’s classes. Up in Smoke is the farm’s most unique Oregon cheese. The cheese is produced completely on the farm, smoked with maple and alder and then wrapped in maple leaves grown on the farm. Up in Smoke has won several awards, including third place in the 2009 American Cheese Society Annual Cheese Competition.
