The first all-natural truffle oil ever produced in the U.S. crossed paths with Oregon State twice on its way to commercial availability. Jack Czarnecki, owner of Joel Palmer House in Dayton, Ore., worked with Food Science and Technology professor Michael Qian, who analyzed the oil to isolate and identify the gasses that come from truffles and make the oil so unique. Jack also came to the Food Innovation Center for help with product labeling.
